The ingredients needed to make Harissa Paste:

  1. {Make ready 110 gm of mixed dried chillies. I used Guajillo, Kashmiri, Chipotle & Birds Eye.
  2. {Take 1 tbsp of Cumin Seeds, Caraway Seeds, Coriander Seeds.
  3. {Make ready 1 tsp of fenugreek seeds.
  4. {Take 1 tsp of mustard seeds.
  5. {Prepare 2 tsp of smoked paprika.
  6. {Get 10 cloves of Garlic.
  7. {Get of Juice of 1 lemon.
  8. {Prepare 3 Tbsp of olive oil.
  9. {Get 1 tsp of Maldon salt.

Instructions to make Harissa Paste:

  1. Add the dried chillies to a non-stick pan over a medium heat for 3/4 minutes. Keep them moving to avoid catching, this will help release natural oils..
  2. Remove chillies & add them to boiling water & simmer for 15 mins. Once done remove pan from heat & let sit for 30 mins..
  3. Toast garlic cloves for 5 mins in a non-stick pan over a medium heat. Then add the dried seeds & continue to toast for 3/4 mins carefully not to burn..
  4. Drain & pat dry the chillies & add to a blender along with all the other ingredients. Blend to a paste..
